AIP Chicken Tacos



For who knows how long, I've been trying to come up with a AIP tortilla/wrap recipe that tastes amazing, and behold the plantain tortilla! I've made renditions of these in the beginning stages of paleo but with eggs, and it occurred to me recently that I was way over complicating things. I used tradition corn tortillas as inspiration for these wraps and they came out so perfect. These tacos are the perfect combination of flavors, and will definitely impress even non AIP folks.



For the tortillas:

Put oven on high broil

1) Chop plantains into thirds, with skins, cutting off the ends. (3 plantains yielded 8 tortillas)

2) Boil plantains for 20 minutes or until fork tender

3) Blend into food processor/blender till stick dough forms




4) Roll into small balls, grease with avocado oil

5) Using Rolling pin, roll out between to pieces of parchment

6) Bake on sheet pan on bottom shelf for 5 minutes, flip, and bake again for another 5 minutes



For the chicken:

1 lb chicken

1 cup orange juice

1 tsp apple cider vinegar

1 tsp fresh oregano

1 tablespoon dried oregano

1 tsp cumin (optional)

1 1/2 tsp salt



1) Blend everything but chicken and set aside

2) Cut chicken into chunks, saute with avocado oil in a bit of salt

3) Let cool and pull with hands

4) On high eat pour in chicken marinade and let simmer

5) Add chicken and cook till excess liquid is dissolved

set aside


Mango Salsa:

1 super ripe mango, diced

1/4 cup cilantro, chopped

1 green onion, sliced

1 Lime Juiced

Pinch of salt


1) Mix all ingredients, set aside



Avocado Sauce:

1 ripe avocado

1/4 cup cilantro

2 cloves garlic

2 tablespoons avocado oil

2 tablespoons water

1 tsp salt


1) Blend all ingredients and set aside


Pickled Onions:

1 Cup Apple Cider Vinegar

1 Red Onion, sliced


Boil apple cider vinegar and pour over sliced onions, refrigerate. I did this as the first step after boiling plantains to allow time for pickles to cool.


Assemble tacos and enjoy, I added some spicy micro greens as for texture.
