Apple & Chantrelle Stuffed Butternut (AIP/Vegan)


1 Butternut Squash, halved and deseeded

5 Chantrelles, diced

1/2 an onion diced

1/2 a red apple, diced

1 tablespoon thyme

2 cloves garlic

1 small stalk of celery

2 tablespoons oil of choice

Preheat oven to 425. Bake squash for 30 minutes until fork tender

Sautee garlic and onion with oil of choice, add remaining ingredients and continue to sautee for 15 minutes. Scoop our a bit of squash from the neck and fill inside with filling and enjoy!
