Lemon Tart (aip/raw vegan)

Most raw deserts are filled with nuts but this one is auto immune friendly and law carb compared to most nut filled treats.




12 ounces coconut flakes

12 ounces additive free coconut milk

3/4 cup dates plus 8 dates

2 table spoons coconut oil

1/2 cup lemon juice

2 tablespoons lavender dried

2 tablespoons chamomile dried

Pinch of salt

Simmer lemon juice in pan, add chamomile and lavender and cook for two minutes and turn off eat. After 10 minutes strain and set aside. 

 In food processor or blender, blend 1 cup coconut flakes with 3/4 cup dates  and coconut oil until sticky crust forms. Press into cake pan. Then blend remaining flakes for about 20 minutes until coconut becomes butter, add lemon juice, salt, and remaining 8 dates and refrigerate over night. Add 1 teaspoon turmeric for yellow color and additional lavender and chamomile for dusting if desired
