Maple Sausage Breakfast Sandwich


On Paleo, sandwiches are not something we get to frequently enjoy, but with the help of a waffle maker, this treat got a whole lot easier. these buns hold up to the goodies you want to stuff them with and have a biscuit like texture. I loaded my sandwich with roasted beats, caramelized onion, fried egg, and arugula.


waffle buns:

1 cup tapioca

1/2 cup coconut flour

1/4 cup cooked spinach

1/2 cup coconut oil

1/2 cup warm water

1 egg

1 tsp baking soda

1 tsp salt

Blend batter with emersion blender and pour into waffle iron for 5 minutes and finish at 350 for 15 minutes


Chicken sausage recipe:

1/2 lb ground chicken

1/2 tablespoon black pepper

1 tsp coriander

1/2 tablespoon garlic powder

1 tablespoon fresh thyme

1 tsp maple syrup (optional)

1 tsp salt

Combine all ingredients in bowl and portion into patties and cook in skillet on each side till fully cooked.
