Plantain BBQ Chicken and "Cornbread" Waffles





Has anyone ever stared in awe at a plantain? They are so amazing and versatile and in the right light can be imitate corn so realistically, or even fried chicken for that matter. In this recipe were doing both!


For the Waffle

1 plantain

1/4 cup cassava flour

1/2 cup coconut milk

1 egg

1 tablespoon apple cider vinegar

2 tablespoons honey

3-4 small jalapeno sliced and sauteed

1 tsp salt

2 tsp baking soda

Blend all ingredients except for jalepino and stir in. Pour into waffle maker and let sit for 5 minutes or so and then finish in oven for 15 minutes at 425 degrees


For the BBQ

1 cup veggie broth

1/3 cup molasses

1 tablespoon smoked paprika

1 tablespoon honey

1 tablespoon Dijon mustard

1 tablespoon acv

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon onion powder


Combine all ingredients in sauce pot and bring to a simmer, stire for 5 minutes, turn off and set aside.


For the Chicken:

2 organic thighs dredched in tapioca flour

Soak with 1 egg and 1/4 cup coconut milk

1 plantain sliced, fried or baked and then blended

1/4 cup cassava flour

1 tablespoon of salt

1 teaspoon black pepper


Mix plantain breadcrumbs and cassava flour and dredge chicken. Oil pan and bake for 20 minutes flipping over mid way. Or fry and finish in oven for 15 minutes with waffles. Coat in BBQ sauce
