Salmon Eggs Benedict(LF/SCD)



Smoked Salmon Eggs Benedict, on a butternut squash "crustini", with organic  microgreens and red pepper caper hollandaise sauce


This recipe is amazing for those who want to keep their carb counts down, or those on specific carbohydrate diet, or low fodmap


Cut neck of butternut squash peel and slice into cylinders, coat in oil of choice, salt and pepper, and roast on high broil for approximately 10 minutes on each side until toasted and fully cooked. Add microgreens, smoked salmon, poached eggs, and hollandaise sauce


For the sauce:

Boil water and pour into food processor, let it sit covered for 10 minutes, dry with towel and blend the following ingredients:

2 egg yolks

2 green onions (green part only)

1 roasted bell pepper

1 tablespoon dill

1/4 cup capers

Juice of half a lemon

1/2 tablespoon black pepper

2 teaspoons mustard seed powder

1 tsp salt

 

Blend well and then slowly pour about 1 cup olive or avocado oil into mixture emsulfies and thickens
