Smoked Salmon Kale Caesar
This is my unique take on a Caesar with dairy free dressing, smoked salmon, jicama for a delicious crunch instead of croutons, and kale and brussels sprouts instead of romaine. I've also included notes to make a low fodmap version of this meal!

Serves: 2-4
Dressing:
2 egg yolks
1 lemon juiced
1 tablespoon stone ground mustard
1 tablespoon anchovy paste
4 Cloves garlic (omit if low fodmap)
1 tablespoon capers
1 green onion without bulb
1 tablespoon nutritional yeast
1 tablespoon
1 cup olive or avocado oil
1 tsp salt
1/2 tsp courtly ground pepper
1 cup olive oil
Combine all ingredients except olive oil in food processor and slowly pour in olive oil till emulsified
For salad:
1 bunch of red kale thinly sliced
1/2 lb of Brussels (sub for more kale if low fodmap)
1 jicama cut into cubs (omit if low fodmap)
4 oz sugar free smoked salmon (or more if you’d like)
Avocado (1/8 of one if low fodmap)
Toss greens with dressing, and load with jicama, avocado, and salmon!
