Southwestern Egg Rolls


Whattt whattt paleo Southwestern Egg Rolls? Aren't Southwestern Egg Rolls pretty much just beans and cheese and corn? Well not anymore! This filling recipe and aoli pair perfectly with my Paleo Egg Roll wrappers but will work well with any other wrappers you chose to use.


Makes: 12 egg rolls


Taco Seasoning:

Ingredients-

  • 8 tablespoon chili powder

  • 2 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 2 teaspoon dried oregano

  • 2 teaspoon paprika

  • 1 teaspoon mustard powder

  • 1 teaspoon cayenne powder

  • 2 tablespoons ground cumin

  • 2 tablespoon salt

  • 1 tablespoon black pepper

Spicy Lime Cilantro Aoli:

Ingredients-

  • 2 egg yolks

  • 1 cup avocado oil

  • 2 cloves of garlic

  • 1 lime juiced

  • 1 teaspoon apple cider vinegar

  • 1 green onion

  • 2 tablespoons cilantro

  • 1 tablespoon taco teasoning

  • 1 1/2 teaspoon salt

  • 1 or two tablespoons of water

In blender/food processor combine all ingredients till blended, blend on low and slowly pour in avocado oil, emulsifying the oil into the mixture until you have aoil. Add 1 or 2 tablespoons of water and blend for desired thickness.


Filling:

Ingredients-

  • 1 lb Chicken breasts, butterfly

  • 1/2 a red onion diced

  • 1 stalk celery diced

  • 1 medium green chili diced

  • 1/2 a red bell pepper, diced

  • 1/2 a yellow bell pepper, diced

  • 2 tablespoons tomato paste

  • taco seasoning

  • 2 tablespoons avocado oil

Coat chicken in taco seasoning, heat skillet with 1 tablespoon avocado oil, cook chicken fully and set aside. Add another tablespoon of avocado oil, peppers, onion, and celery to skillet and sauté for 10 minutes, stir in remaining taco seasoning and tomato paste, mix in chicken. Stuff your wrappers with about 3 tablespoons of filling and fry in coconut oil or any other high eat fat of your choice.
