Topless Apple Pie


Paleo topless apple pie!

Ingredients: - 5 apples cut in half, seeds removed - Juice of half a lemon - 1/2 teaspoon of vanilla extract - 1 tablespoon cinnamon -1/2 teaspoon nutmeg - 1/2 cup maple syrup - 3/4 cup + 1 tablespoon tapioca flour(and more for dusting) - 3/4 cup coconut flour + 1 tablespoon - 4 eggs - 1/2 cup melted coconut oil - pinch of salt

Preheat oven to 350 degrees

Mandolin 4 1/2 apples at 3-3.5 mm and then the remaining half at 2.5 mm. Coat with cinnamon, nutmeg, vanilla, and lemon juice.

In seperate bowl add 3/4 cup tapioca flour, all of coconut flour, melted coconut oil, eggs, and a pinch of salt, combine. Oil pie pan and press dough evenly onto pan, forming a crust, use tapioca flour for dusting. Bake for 10 minutes

Allow to cool for 10 minutes

Starting at the edge of the pan go around in a circle with apple slices overlapping eachother about half way, working your way in a spiral towards the cen

ter. Use the thinner apple slices for the center of the pie. I wouldn't worry too much about it looking perfect right away. Once you have the whole pie filled you can come back and add all remaining apple slices and fill emptier looking spots.

In a sperate bowl add maple syrup and 1 tablespoon of tapioca flour, mix and pour over apples. Bake for 30 minutes, let cool and refrigerate.
